
These stuffed peppers are like a warm blanket hugging me on a cold evening. They are my # 1 comfort food and very much needed now that temperatures are heading south. The thing is, that it's not just about eating these peppers, it's also about cooking them. My entire 350 or so square foot apartment is filled with the most delicious smell while these stuffed peppers are cooking. There's something about peppers, meat, and tomato sauce boiling together that makes such a sweet smell.
I've made this dish countless times and occasionally even forgot to add onion. I guess when you are too confident in your skill and knowledge you stop paying attention. Oh, yeah, I know how to make these so I'll just turn off my brain. At times, overconfidence can be as dangerous as low confidence.
The measurements are just a guideline so feel free to add more onion, less rice, more dill etc. I love the dill in this recipe so I don't suggest using parsley or another herb. In any case, don't forget the onion!
