I don’t think I can ever get sick of potatoes. When I read this recipe in a Romanian cookbook given to me by my aunt, I just had to make it, more than once. I hope you enjoy it as much as I did.
Country-Style Potatoes Recipe
From Romanian Cookery Book, by Georgeta Rosu
1.5 lbs small red potatoes
2 medium yellow onions
1/3 cup parsley
Salt and pepper to taste
Wash and clean the potatoes but do not peel. Set to boil in a pot of water with salt. Boil the potatoes until cooked all the way through. I recommend that you use smaller potatoes to make cooking all the way through easier and that potatoes are about the same size so they have the same cooking time. The potatoes are cooked when you can easily pierce them with a fork. Once cooked, remove from water and let cool.
In the meantime, julienne the onions (http://www.hungrycravings.com/2008/09/cutting-onions-slice-versus-julienne.html). Add 4 tablespoons cooking oil to the pan and once hot, add the onions. Cook until they turn golden, then add the potatoes that have been peeled and chopped in cubes (about 1/2 inch by 1/2 inch). Cook for about 5 minutes.
Sprinkle with freshly chopped parsley and black pepper. Bon Appétit!
Serves about 4 as side dish or appetizer.
