In the summer my grandma would make green beans cooked with garlic, dill, tomatoes and chicken. This summer I was obsessed with this dish. Even though the taste of it was as clear in my mind as if I had eaten this yesterday, the cooking method was definitely foggy. Luckily, for any questions on cooking and baking, I have my aunt who is the most talented cook and baker I know.
Without her guidance, I would have never figured out how to make this dish and many others properly. Cooking is a tradition that gets passed down from generation to generation. The culinary traditions of a country build throughout the ages. For me, cooking is not just about the joy of cooking and the pleasure of eating, but it provides a way to connect with previous generations and ultimately with my culture.
Green Beans with Chicken
Ingredients:1 medium yellow onion, chopped
2 tablespoons cooking oil
1.5 lbs-2 lbs green beans
8 cloves garlic, sliced into 3-4 pieces
2 peeled tomatoes
2 chicken breasts
1 tablespoon tomato paste
1/4 cup fresh chopped dill + an additional 1 additional tablespoon chopped dill
1 cup water
Cut the ends of the green beans and then cut the beans in half. Heat 2 tablespoons cooking oil in a pan and add the chopped onion. Cook the onion until golden. Add the green beans and 1 cup water.
Cover the pan and cook for about 30 minutes on medium-high heat. After 30 minutes, add the garlic. Add the peeled, diced tomatoes (see note below), fresh chopped dill, tomato paste and more water if necessary. Cover the pan and continue cooking.Slice the chicken breasts in 3-4 pieces, sprinkle with salt and pepper and saute in a separate pan until golden brown. Add the chicken breast to the pan in which the beans are cooking. Continue cooking until the beans are soft. Total cooking time should be around 1 hour. Once the beans are cooked, add 1 tablespoon of fresh chopped dill.
Serve with bread and add some sour cream, if you wish.
Note: To peel the tomatoes, place them in a pot of boiling water for about 2 minutes. Let the tomatoes cool then peel.
