When I asked my friend how to make it, she couldn’t tell me the quantities since she cooks “by eye", just like me. I only started measuring the ingredients for my recipes thanks to this blog. The best solution, we decided, was for us to cook it together. One rainy afternoon (we've have a good number of rainy afternoons in New England this summer), she joined me in the kitchen and we had a fun time cooking this recipe. It’s waaay more fun cooking with a friend than by yourself, even if you argue. :) So whenever you have the opportunity, ask a friend or your significant other to join you in the kitchen.
Lettuce Soup Recipe
Ingredients:About 1.2 oz of sliced smoked bacon (can be excluded)
6 cloves chopped garlic
3 1/2 cups finely chopped scallion (use entire scallion after cleaning it)
2 cups of the dark green part of the scallion which is about 8 large scallions.
1 large bunch of dill.
7 cups finely chopped romaine lettuce; about one medium head
3 cups water
4 cups milk
Salt to taste
Method:Heat 2 tablespoons of cooking oil in a large pot over medium high heat and when the oil is hot, add the sliced bacon.
When the bacon has cooked, add the garlic. While the garlic is cooking, chop the scallion and add to the pot. Turn the heat to medium.
Take one large bunch of dill and clean the ends. Starting with the stems, chop the dill finely. Add 1 1/4 cups dill to the pot.
Wash the romaine lettuce, chop finely and add it to the pot. Add 3 cups of water and let boil for about 15-20 minutes or until the lettuce has cooked.
Add the 4 cups of milk and another 1/2 cup dill. Boil at low heat for another 10 minutes. Add 1/4 cup dill and the dark green ends from 8 large scallions (about 2 full cups). Bring to a boil.
Let the soup cool for 1 hour before serving. Serves about 4-6.Questions? Comments? Please let me know. Happy Cooking! :)
