These cookies are so easy to bake a cave man could do it. Delicious? Yes. Effortless? Yes. What’s not to love? They are crumbly, delicate, and simply melt in your mouth. The nutty flavor of the walnuts blends unexpectedly with the refreshing taste of the lemon zest. I hope you enjoy baking and eating these cookies as much as I did.
1 stick of butter (8 tablespoons) at room temperature
1 ¼ cups of all purpose flour
¾ cup (2.8 ounces) of ground or diced walnuts (see note below on walnuts)
½cup powdered sugar for the dough plus more powdered sugar to dust once the cookies are done
½tablespoon lemon zest
Note on walnuts: I couldn’t find ground walnuts at the supermarket so I bought finely diced walnuts and simply crushed them with the rolling pin. Here is a picture so you get the idea.
Preheat the oven at 350˚F.
Add the butter (at room temperature, cut in 4 pieces) flour, walnuts, powdered sugar, and lemon zest to a large mixing bowl. Mix the ingredients with a fork, then with the mixer at the lowest speed.
Take generous tablespoons of the dough and roll it into small balls. Place on the baking sheet.
Bake in an oven preheated at 350˚F for 15-20 minutes. Let cool then dust with powdered sugar.
